Heated oil again. Dropped a few shrimp in. Golden? Took maybe 2 minutes a side. Didn’t deep-fry, just shallow pan-fry. Had sweet chili sauce and a mix of mayo/pineapple bits for dipping. Made a quick one with lime juice and sour cream too.
Assembly Line and Taste Test
Pulled the marinated wings out. Whacked ’em under the grill, turning often. Skin finally got crispy, smelled amazing.

Lessons Learned and Mess Left Behind
Honestly? Prep takes ages. Peeling stuff sucks. But… watching folks grab stuff off the table quick? Fun. Plantain cups are fiddly – probably won’t do a hundred again, but worth trying once.
The jerk wings? Definitely the winners. Simple marinate, cook. Coconut shrimp not too bad either, just don’t soak them in the oil. Dipping sauces? Essential for the messy fingers.
