Hey everyone, so I’ve been on this kick lately trying to find dinner recipes that don’t take forever to make. You know, something easy, something simple, and definitely something quick. I mean, who has time after a long day to slave away in the kitchen, right?

So, I decided to roll up my sleeves and do some experimenting. I started by scouring the internet, just browsing through endless food blogs. I needed something that I could make using just a few things that I could find in my pantry.

First thing I tried was making some shredded chicken tacos. I just threw some chicken breasts into my Instant Pot with a bit of salsa and taco seasoning. I set the timer and let it do its thing. I walked away and did some other chores around the house.

After the Instant Pot beeped and I shredded the chicken with two forks. I warmed up some tortillas and assembled the tacos with the chicken, a bit of cheese, and some extra salsa. Boom, dinner was served! These were a big win, quick and tasty.

Next up, I wanted to try something without meat. I remembered seeing something about chickpea gyros online. I opened a can of chickpeas, rinsed them, and sautéed them in a pan with some spices like cumin and paprika. In less than 10 minutes, they were golden brown and smelled amazing.

I grabbed some pita bread, stuffed it with the chickpeas, added some lettuce, tomatoes, and a dollop of yogurt. Honestly, it was surprisingly good and filling. It’s definitely going into my regular rotation.

My Thoughts

These two dishes were super easy to make. They didn’t require any fancy ingredients or special skills. The Instant Pot chicken was pretty much set it and forget it, and the chickpeas were done in the time it took to chop up some veggies.
