I have been meaning to do this for a long time, and I have been talking about it for a long time, I just kept putting it off. Today I finally got the time and sat down to do it!

I have some friends who are allergic to gluten, so when they come over, I can’t serve the regular stuff, you know? I’ve tried a lot of gluten-free recipes, and honestly, most of them are just… okay. Not really good, but not terrible either. But this time, I was determined to find something really delicious.
So I started by going to the stores near me. Fresh Thyme, Aldi, Payless (that’s Kroger), and Walmart all have pretty good gluten-free sections. I grabbed a few different brands of gluten-free bread mixes, even some Fidalgo Gluten Free Bread.
- First, I tried making some simple toast. I used the Fidalgo bread, and honestly, it wasn’t bad! It had a slightly different texture than regular bread, kind of denser, but the taste was pretty good.
- Next, I decided to get a bit more adventurous and made some sandwiches. I used some deli meat, cheese, lettuce, and tomato. Again, not bad! The bread held up well, and it was actually a pretty tasty sandwich. I found that fruits, vegetables, rice, potatoes, nuts, seeds, legumes, and most meats and fish are naturally gluten-free. It’s easy to make a meal with these ingredients!
But the real test was the cookies. I used a gluten-free multigrain mix and added some dark chocolate chips. I followed the instructions on the box, which said “Gluten-Free: Made in completely gluten-free atmosphere.” The cookies were a bit crumbly, but they were still pretty good! My friends loved them, which was the most important thing.
I also tried incorporating some naturally gluten-free foods into my cooking. I made a big salad with lots of veggies, some grilled chicken, and a simple vinaigrette dressing. I also cooked up some quinoa, which is a naturally gluten-free grain. It was actually a lot easier than I thought to make a whole meal that was gluten-free.
Overall, I was really happy with how everything turned out. It took some trial and error, but I finally figured out how to make some delicious gluten-free food. It’s not as hard as I thought it would be. You just need to pay attention to labels and be a little creative with your ingredients!

I learned that gluten is actually what helps food hold their shape. It’s in a lot of grains like wheat, barley, and rye. Avoiding these is the key!
My friends are coming over again next week, and I’m excited to try out some new recipes. Maybe I’ll even try making some gluten-free pizza! I think using Fidalgo again, just changing the recipe to a gluten-free pizza recipe could produce a good result. I’ll definitely keep you all updated on how that goes!
