A quick zap in the microwave, and boom – lunch is served. Zero effort, zero extra cooking. I just make sure dinner was something that reheats okay. Soups, stews, pasta, rice dishes – they all work.
2. The Speedy Sandwich (or Wrap): Not talking about some gourmet, ten-ingredient monstrosity. I mean bread, some protein – maybe leftover chicken, or a couple of slices of ham, or even just cheese. A bit of lettuce if I have it, maybe a smear of mustard. Done. I usually get some decent bread on the weekend. Then I just assemble it. Takes, what, three minutes? Wraps are good too. Slap stuff in a tortilla, roll it up. Easy.
