So, the other day I was STARVING, but I also didn’t want to spend a million years in the kitchen. You know those nights? I needed something fast and tasty, and that’s when I decided to whip up this beef stir-fry.
Getting Started
First, I grabbed some beef. It was already sliced thin from the grocery, so it saved much time, then I just cut into the bite-sized pieces, you know, whatever looked good. I tossed that into a bowl.
Making the Marinade
Next up, the marinade, my favorite part! I dumped in some soy sauce, probably a couple of tablespoons, but who measures? A squirt of honey. Then, because I like a little kick, I added some chili garlic sauce. Just a little, I didn’t want to burn my face off, that’s not funny. Finally, I whisked all ingredients with my tiny whisk, looks great!
Prep the Veggies
For the veggies, I kept it super simple. I had a bag of those pre-cut broccoli florets, so I just tossed a bunch of those in. I also chopped up some mushrooms, because I always need to be more nutrition. Threw those in with the broccoli.
Stir-Frying!
I heated up my wok (you can use a regular pan, it’s fine) with some oil. Once it was nice and hot, I dumped in the beef. I let that cook for a few minutes, stirring it around until it was all browned. Then, I threw in the broccoli and mushroom.

I let that all cook together for another few minutes, until the broccoli was bright green and a little tender. Then, I poured in the rest of the marinade I had whisked from the beginning.
The Finish Line
I let it all simmer for a minute or two, just to let the sauce thicken up a bit. And that was it! I served it over some rice I had cooked earlier (thank goodness for rice cookers!).
Seriously, this whole thing took maybe 20 minutes, tops. And it was SO good. The beef was tender, the veggies were perfect, and the sauce was just the right amount of sweet and spicy.
This is definitely going into my regular rotation of quick and easy dinners. Give it a try, you won’t regret it!
