Okay, so Saturday morning rolled around, and I woke up kinda late, stomach already rumbling. Didn’t feel like a proper big breakfast, you know? But cereal just wasn’t gonna cut it either. That’s when the brunch idea hit me. But, and this is a big but, I wasn’t about to spend hours slaving away in the kitchen. Quick and easy was the name of the game.

First thing I did was wander over to the fridge and cupboards, just took a quick look to see what I actually had on hand. Didn’t want to make a special trip to the store, that defeats the whole ‘easy’ part. Found some eggs, pretty standard. Had some bacon lurking in the back, score! A bit of bread, some cheese slices, and half an avocado that was looking just about perfect. Okay, things were starting to take shape.
Decided right then, nothing fancy. We’re talking basics here. So the menu kinda built itself:
- Scrambled eggs (can’t go wrong, right?)
- Crispy bacon (a must)
- Toast, but maybe jazzed up a bit
- Maybe some sliced avocado on the side
Getting Down to Business
Alright, plan made. Time for action. Put the pan on for the bacon first. Low and slow, that’s how I like it. Let it render out and get nice and crispy. While that was doing its thing, I cracked a few eggs into a bowl. Didn’t do anything crazy, just a splash of milk, bit of salt and pepper. Whisked it up real quick with a fork.
Bacon looked about done, so I pulled it out onto a paper towel to drain. Kept a little bit of that bacon grease in the pan, though – flavor, people! Poured the eggs right into that same pan. Kept them moving gently with a spatula so they wouldn’t stick or overcook. Wanted soft scramble, not rubber.

While the eggs were finishing up, popped a couple of slices of bread in the toaster. Nothing fancy, just plain white bread today. Eggs done? Scooped ’em onto a plate next to the bacon. Toast popped up. Buttered that quickly.
Remembered the avocado. Sliced that up. Also grabbed those cheese slices. So, I put a cheese slice on one piece of toast, let it melt just a tiny bit from the heat. Put the avocado slices on the other piece. Simple stuff.
The Final Result
And that was basically it. Piled everything onto one plate. Took maybe, what, 15-20 minutes total? From thinking about it to sitting down to eat. Got my scrambled eggs, crispy bacon, one piece of cheesy toast, one piece of avo toast. Poured myself a big glass of orange juice (from a carton, keeping it real easy).
Sat down, dug in. Honestly? It hit the spot. Wasn’t gourmet, wasn’t revolutionary, but it was warm, tasty, and exactly what I needed without any fuss. Sometimes the simple stuff really is the best, especially when you just want to eat without a whole production. That’s my kind of quick and easy brunch right there.
