Okay, so I’ve been hearing a lot about gluten-free diets and decided to give it a shot myself. I mean, it seems like everyone’s doing it, right? So, I thought, “Why not?” Here’s how it went down.

My Gluten-Free Experiment
First, I cleaned out my pantry. This was the hardest part, honestly. I was staring at all my favorite snacks, the cookies, the crackers, even some of my go-to cereals, and realizing they all had gluten. It was a bit of a shock. I boxed up a bunch of stuff to give away because I knew I wouldn’t be eating it.
Then, I went shopping. I spent ages in the grocery store, reading every single label. It’s crazy how many things have gluten in them! I found some gluten-free bread, pasta, and even some cookies. They were definitely pricier than the regular stuff, which was a bummer.
Next, I started cooking. I tried to keep it simple at first, sticking to naturally gluten-free foods like fruits, vegetables, and meats. I made a lot of salads and stir-fries. I did okay, and I noticed i did have to use a lot of sauces. I had to be careful with sauces and dressings, though, because some of them have hidden gluten.
- Breakfast: Mostly fruit and yogurt, sometimes eggs.
- Lunch: Big salads with chicken or fish.
- Dinner: Stir-fries, roasted vegetables with chicken or fish, or gluten-free pasta with homemade sauce.
I tried a few gluten-free recipes I found, some were ok, and some weren’t that great. The gluten-free bread was a bit dry, and the pasta was a little mushy, but I got used to it.
After a few weeks, I did feel… different. I am not sure I can explain it, but my digestion felt a bit better. That’s it, that is all i really noticed.

So, that’s my gluten-free journey so far. It’s been a bit of a learning curve, and it definitely takes more planning and effort. It is not really that easy, but I managed to do it, and I felt the difference.
