I tossed all that into a big pot with a couple of tablespoons of olive oil and sautéed it over medium heat until the onions were translucent, maybe 5-7 minutes. Just softened them up a bit.
Then, in went the chicken broth. I used a carton of low-sodium chicken broth. Poured the whole thing in. Then I added about four cups of water. Don’t skimp on the liquid, you want plenty of broth! I also threw in a bay leaf for extra flavor, and seasoned it with salt, pepper, and a little bit of garlic powder. Just eyeball it, you know?
Brought it all to a boil, then reduced the heat and let it simmer for about 15 minutes. This is where all the flavors start to meld together. After that, I added the noodles. I used egg noodles – the wide kind. Cooked them according to the package directions, which was like 8 minutes or so. Watch ’em close so they don’t get mushy! Nobody likes mushy noodles.
Once the noodles were cooked, I stirred in the shredded chicken. Heated it through for a minute or two, and that’s it. I fished out the bay leaf before serving. Ladled it into a bowl, and boom! Quick, easy chicken noodle soup. It tasted amazing, just what I needed. Total time, start to finish? Maybe 45 minutes, tops.
