First things first, I hit up the grocery store. I grabbed a bunch of stuff I thought looked fun and colorful: mini bell peppers, cherry tomatoes, those cute little cucumbers, and some different kinds of cheeses. I also snagged some whole wheat tortillas because, you know, gotta keep it somewhat healthy.

The first recipe we tackled was mini pizzas on tortillas. I laid out all the ingredients – tomato sauce (the low-sugar kind!), shredded mozzarella, pepperoni, and the veggies. Then, I let my daughter go wild! She spread the sauce, sprinkled the cheese, and arranged the toppings. It was messy, sure, but she was having a blast. Popped them in the oven for about 10 minutes, and bam! Mini pizzas. She actually ate them! Victory!

Next up, we tried something a bit simpler: ants on a log. Remember those? Celery sticks, peanut butter (or cream cheese if you’re dealing with allergies), and raisins. Super easy, super fast. My daughter loved smearing the peanut butter on the celery and carefully placing the raisins. It’s a classic for a reason.

Okay, now for the slightly more adventurous one: quesadillas. But not just any quesadillas! We made rainbow quesadillas. I shredded some cheddar, Monterey Jack, and then added in some finely chopped red bell pepper, some corn, and some spinach. Folded them into the tortillas with cheese, and grilled them until the cheese was melty and gooey. Cut them into triangles and she was gobbling them up. The colors were a big hit!

  • Presentation matters. Cut things into fun shapes, use colorful ingredients, and make it look appealing.
  • Don’t force it. If they don’t want to try something, don’t push it. Just move on to the next recipe.
