Okay, so yesterday I was tasked with coming up with some finger foods for a party. A healthy party. Ugh. My first thought was “veggie sticks and hummus,” but that’s been done to death, right?

Brainstorming Time! I grabbed a notepad and started scribbling. I wanted something easy, something that looked good, and, you know, something people would actually eat. “Healthy” can be a tough sell.

First, I thought about the classics but with a twist. So, instead of regular pigs in a blanket, I decided to try:

  • Mini Chicken & Apple Sausages Wrapped in Puff Pastry: Bought some good quality chicken sausages with apple already in them (less work!), cut them into small pieces, wrapped ’em in store-bought puff pastry (I’m not making that from scratch!), and baked them until golden brown. Served with a little dish of Dijon mustard for dipping. They were surprisingly a hit! The sweetness of the apple really helped.

Next, I wanted something colorful and fresh. So, I went with:

  • Caprese Skewers: Super simple! Cherry tomatoes, mini mozzarella balls (the ciliegine size), and fresh basil leaves, all threaded onto skewers. I drizzled a little balsamic glaze over them just before serving. Everyone loves these! Plus, they look so pretty.

I needed something with a little more substance, so I landed on:

  • Sweet Potato Bites with Black Bean Salsa: This took a bit more effort, but it was worth it. I roasted sweet potato slices until they were soft and slightly caramelized. While those were roasting, I whipped up a quick black bean salsa with black beans, corn, red onion, cilantro, lime juice, and a pinch of chili powder. Spooned the salsa onto the sweet potato bites. These were gone in minutes!

And finally, because I’m a sucker for anything avocado, I made:

  • Avocado & Shrimp Bites on Cucumber Rounds: Sliced up a cucumber into thick rounds. Mashed up some avocado with a little lime juice, salt, and pepper. Topped each cucumber round with the avocado mixture and a cooked shrimp. Easy peasy and tasted amazing!

The Verdict

Honestly, I was surprised at how well everything turned out. People actually ate the “healthy” finger foods! The key, I think, is to make things look appealing, offer a variety of flavors and textures, and don’t skimp on the flavor. No one wants to eat bland, boring food, no matter how good it is for them.

What I Learned: Store-bought puff pastry is your friend. Don’t be afraid to use pre-made ingredients to save time. And a little balsamic glaze goes a long way! Also, next time, I’m making double the sweet potato bites – they were definitely the MVP.

Would I make these again? Absolutely! They were relatively easy, looked great, and (most importantly) tasted delicious. Now, off to plan the next party… maybe with some less healthy options this time! 😉
