Alright, so today I’m gonna share my super quick and easy lunch idea. I was staring into the fridge the other day, totally hangry, and realized I needed something fast, like, ASAP.

First things first, I grabbed a can of chickpeas. Yeah, just plain old chickpeas. I drained ’em and rinsed ’em real good, then tossed ’em into a bowl. I hate when they’re still kinda foamy.
Next up, I chopped up whatever veggies I had lying around. This time it was some cucumber, a bell pepper (orange one, looked sad in the crisper), and a bit of red onion. Didn’t even bother being fancy with the cuts, just rough chopped ’em. Small pieces though, don’t want to choke.
Then, for the dressing, I just kinda winged it. Olive oil, lemon juice (the bottled stuff, I’m not fancy, remember?), a squeeze of Dijon mustard, salt, and pepper. Whisked it all up with a fork until it looked kinda creamy-ish. Taste test! Needed more lemon, so I added more. That’s how I roll.
Poured the dressing over the chickpeas and veggies, gave it a good mix. Looked pretty good, actually. But something was missing… Ah ha! Feta cheese! Found a little chunk hiding in the back. Crumbled it over the top. That’s the ticket.
I also wanted some greens, so I just grabbed a handful of spinach and put the chickpea mixture on the spinach.

And that was it! Lunch was served. Took, like, 10 minutes tops. It was surprisingly tasty, too. Healthy-ish, quick, and used up some stuff that was about to go bad. Win-win-win!

Seriously, you can swap out the veggies for whatever you have. Tomatoes, carrots, whatever. The key is the chickpea base and the lemony dressing. Gives it a nice zing.
