Okay, so today I’m gonna share my super simple banana cake adventure! It’s seriously the easiest thing ever, perfect for when you’ve got those sad, overripe bananas staring at you.

First things first, I grabbed my ingredients. I had like, three super mushy bananas begging to be used. Then flour, sugar (brown sugar works best, IMO), an egg, some melted butter, baking soda, and a pinch of salt. Nothing fancy, just the basics.

Next up, the mashing! I threw those bananas into a bowl and went to town with a fork. You want them pretty smooth, but a few lumps are totally fine. Adds character, right?

Then I tossed in the melted butter, egg, and sugar into the mashed bananas. Whisked it all together until it was kinda combined. Didn’t worry about it being perfectly smooth, ain’t nobody got time for that.

In a separate bowl, I mixed the flour, baking soda, and salt. Then I just dumped the dry ingredients into the wet ingredients and gave it a good stir. Just until everything was mixed, didn’t wanna overmix it and end up with a tough cake.

I greased and floured a loaf pan (you could use baking spray too, whatever floats your boat). Poured the batter in and spread it out evenly.

Popped it in the oven, which I had preheated to 350°F (about 175°C). Baked it for like, 50-60 minutes. Just kept an eye on it and poked it with a toothpick to see if it came out clean. That’s the magic test!

Let it cool in the pan for a bit before turning it out onto a wire rack to cool completely. The smell while it was baking? Amazing!

And that’s it! Sliced it up, maybe added a little butter on top (totally optional, but highly recommended), and devoured it. Seriously, this banana cake is foolproof. If I can make it, anyone can. Give it a try – you won’t regret it!
