Alright, so I decided to tackle an apple pie the other day. Saw a recipe claiming it was ‘quick and easy’, and honestly, that’s exactly what I needed. Didn’t have hours to spend, you know?

Getting Started
First thing, I went digging in the kitchen. Found about four or five apples – think they were Granny Smiths, the green ones. They looked okay. Grabbed my peeler and went to work on them. Peeling always takes longer than you think it will, but got it done. Then, I chopped them up. Didn’t fuss too much about making the pieces perfect, just rough cubes. Threw them all into a big bowl.
Next, I tossed in some sugar, maybe half a cup? And a good shake of cinnamon. Found a little bit of nutmeg in the back of the cupboard, so added a pinch of that too. Gave it all a good stir with a wooden spoon until the apples were coated.
Putting it Together
Now for the ‘easy’ part, I guess. I used store-bought pie crusts. The kind that come rolled up in a box. Way faster than making my own. I unrolled one crust and carefully placed it into my pie dish, pressing it down a bit. Then I dumped the whole bowl of apple mixture right into the crust. Spread it out evenly.
Took the second crust out, unrolled it, and laid it over the top of the apples. Tried my best to pinch the edges of the top and bottom crusts together to seal it. It looked… homemade, let’s say. Cut a few slits in the top crust with a knife, so steam could escape while baking. I think you’re supposed to brush it with egg wash or milk, but I skipped that. Trying to keep it simple.
Baking Time
Okay, oven was already preheating. Think I set it to around 375 degrees Fahrenheit, maybe 190 Celsius? Carefully slid the pie onto the middle rack. Set a timer for about 45 minutes and hoped for the best.

- After about 20 minutes, the kitchen started smelling really good. That classic apple and cinnamon smell.
- Checked it around the 40-minute mark. The crust was getting nice and golden brown.
Pulled it out when the timer went off. It looked pretty decent! Definitely like an apple pie.
The Result
Let it cool on the counter for a bit. Probably not as long as you’re supposed to, I get impatient. Cut a slice while it was still warm. The filling was hot and bubbly, apples were soft. The crust held together alright. Was it the best apple pie ever? Probably not. But was it quick and easy? Absolutely. Hit the spot for a homemade-ish dessert without a ton of effort. Worked out okay, I’d say.
